What size are these threads? Would it be compatible with an adapter on a Fiat 850 Spider

850 threads are very different from this unit.

Does this oil pressure sensor come with the seal/hasket?
Hello,
There is no "seal" or "gasket" for this part. The product has a washer that goes on the thread in part that seals it once fully installed.
If you look closely at the photo you'll see the washer which is included.

Does this item control both the oil pressure gauge needle and light on a 77 124 Spider?

No, this is only the needle. The warning light is SKU 54-9661.
